Cucumber-Avocado Soup

Ingredients

1 c buttermilk

2 cucumbers, peeled, seeded, and chopped

1 ripe avocado

1/4 c chicken broth

2 T fresh lemon juice

1/4 t ground cumin, or to taste
Directions
In a large measuring cup combine buttermilk plus ice cubes to measure 1 1/2 c total. In a blender, blend buttermilk mixture with the avocado, lemon juice, cumin, and half the cucumbers until smooth. Divide into chilled bowls and stir remaining cucumbers into each serving. (Makes 3 1/2 cups)
Guacamole

Ingredients

4-6 Ripe avocados

1 chopped tomato

1 dash of salt (about 1 tsp)

1 dash black pepper

1 dash red pepper flakes

1/2 red onion, chopped into tiny pieces

1/4 cup chopped hot banana peppers

2-4 minced garlic cloves
-
5 tsp chopped fresh cilantro

1 lime
Directions
Add all ingredientes except the tomatoes, avocados and lime juice into a large bowl. Then, add your avocados and chop them into small pieces while in the bowl. Stir so everything mixes evenly with the avocados. Then, add the tomatoes. Stir until they mix evenly with the avocados. Now squeeze and mix the lime juice into the guacamole. Serve with chips, on top of Mexican food, on hamburgers, or sandwiches.
